Watermelon Rosé Cooler

Watermelon is in season and this is a delightful way to enjoy it during the summer months. Not a challenging beverage to make, but a bit more time consuming to prepare. The idea is to make something of a granita, alternatively freezing and chopping the watermelon and rosé wine. What you wind up with is a refreshing and lively adult slushy.

Serves: 4

Special Tools: Blender, Freezer, Sheet pan

Difficulty: Medium

Ingredients

½ small watermelon⁠ ⁠

1 bottle of rosé⁠ 

Sparkling water OR  sparkling wine

Steps
  1. Purée watermelon⁠.
  2. Mix in ½ to 1 bottle of rosé⁠ .
  3. Pour watermelon rosé mixture onto a shallow sheet pan with edges and gently place it in the freezer.⁠
  4. Freeze for ~90 minutes, occasionally chopping it all up with a pastry cutter and mixing it together before spreading back out and letting freeze more.⁠
  5. When you can make decent pile of frozen shards, scoop into a glass and top with some sparkling water OR a sparkling rosé, like this one from Corner 103 we had on hand. ⁠.
